Chef Ming-Po Huang, currently leading the Culinary Arts & Food Carving Center at Sheraton Grand Taipei Hotel, is recognized as one of Taiwan’s foremost masters of fruit carving. With exceptional skill in crafting intricate designs from a variety of fruits and vegetables, his knife brings to life vivid portrayals of people, animals, and plants—breathing new life into each ingredient.
More than just a practitioner of carving artistry, Chef Huang is also a dedicated mentor committed to passing down this time-honored craft. He believes fruit carving is not merely an extension of culinary skills but a cultural and technical heritage. Devoted to nurturing the next generation of chefs, he personally instructs them in the art of carving—from selecting ingredients and mastering knife techniques to designing compositions—carefully imparting every detail to ensure this art form is preserved and passed on through generations. To him, fruit carving transcends visual artistry; it is a dialogue across time, embodying craftsmanship and the responsibility of cultural transmission.
Chef Huang has also challenged the stereotype that fruit carving is wasteful. Long before sustainability became a trend, he embodied the Daoist philosophy of “great usefulness lies in what is deemed useless”, turning the aesthetic value of carving into a form of sustainable art. He has pioneered upcycling discarded materials into his creations, bringing environmental consciousness into his artistic process.
On a daily basis, he carefully collects and repurposes surplus food materials—grape stems, longan shells and seeds, lobster shells, watermelon rinds, pumpkin skins, pineapple tops—transforming them into unique carving media through his expert craftsmanship.
